Our Chef has a culinary philosophy in which the main ingredient is the star of each dish, respecting and enhancing its flavour and properties with different culinary techniques. His main goal is to narrate and exalt the richness of Yucatecan food through typical ingredients of the region, which he includes in all the dishes that he cooks.
Chef Ángel Peláez
Originally from Puebla, Chef Ángel Peláez is the custodian of the flavors of our cuisine. It was his grandmother and his mother who brought Ángel closer to the world of gastronomy. He currently has more than 8 years in the art of gastronomy in different restaurants and hotels in Puebla, Cabo San Lucas and Mérida..
